I’m Kirk McElhearn, and I’ve been baking bread off and on for a few decades. In recent months, I’ve been baking loaves with different flours, combinations of flours, and hydration levels, trying to develop a good technique, but I know that there’s no such thing as a perfect loaf.
I bake yeast bread, mostly in pans. I’ve tried sourdough, and have never been successful, so don’t try to convert me. Yeast breads are excellent, and I’d rather learn to make yeast breads effectively than mess with the complications of sourdough.
