New Bread Knife: Mercer Culinary M23210

Who knew that serrated knives had different types of serrations that were better or worse for different types of bread? Well, I didn’t. I have a Wüsthof serrated knife, that came in a set of five knives I bought about ten years ago. But it wasn’t very good at cutting soft loaves that I make in my bread pan, which are fairly tall.

So I did some research, and found that a wavy-edged serration is better for this type of loaf. I bought the Mercer Culinary M23210 , Stainless Steel, Black, 10-Inch Wide Wavy Edge Bread Knife, which cost £26. My Wusthof, on its own, sells for £115. The Mercer is 10″, or 25 cm, compared to the Wüsthof, which is only 20 cm; the extra length makes a big difference given the size of my loaves.

And, yes, it does cut soft loaves much better. I can more easily make thin slices of bread now.
