All of the loaves on this blog so far were baked in the Netherton Black Iron Loaf Tin Cloche. This is a two-part bread pan. You bake the bread for a while with the top on, and this retains steam; similar to what you get when you bake a loaf in a Dutch oven. Then you remove the top to brown the loaf.
I love this pan. It’s heavy, and has great heat conductivity, and the size is perfect to make large slices of bread for sandwiches. The top and bottom have rivets and holes, so they stay together when you use them.
