Artisan Flours in the UK

Most of my recipes lately have been made with Matthews Cotswold flour, since I placed a large order from them a couple of months ago. My local Waitrose supermarket also stocks a few of their flours.

As I go through all my stock, I’ll buy some flours from other millers, such as Wessex Mill, Shipton Mill, Gilchesters, Marriages, and Doves Farm, some of whose flours I have tried before, since they are also sold in Waitrose. The instant yeast I use comes from Doves Farm.

It’s great that there are so many options in the UK for artisan flours, and that many of them sell organic flours, flours from ancient grains, and promote regenerative farming.

The featured image photo is of wheat in a field next to my house. Unfortunately, my neighbors only grow wheat for animal feed, not for human consumption.
